This region is limited in the north by Colombia and in the south by Peru, and is the seat of the capital city of Ecuador, Quito.

The whole highland is part of the Andes mountain range, and in its centre are some of highest volcanoes in the world.

In the highlands we can also find the most of the national parks and important ecological reservations as: Cotopaxi, Cayapas, Cotacachi, Pululahua, Cayambe-coca, The Illinizas, Cajas, Llanganates, Antisana, Chimborazo and Sangay.

Climate in this area is very changeable, the nights are cold, and the days hot. The temperatures oscillate among 10 -25 degrees of Celsius. There is a great biodiversity in each area of Ecuadorian highlands due to its unique position around the equatorial line and huge geographical variety.

The nature is changing depending on the altitude, from cloud forests through moors to perpetual snow plains. It is one of the few countries in world that preserves important quantity of original indigenous ethnics.

From the time of the Spanish conquest is this region well-known for exquisite Creole gastronomy and flavourful combinations of traditional cuisine.
